Part of what you need to decide is what you plan to serve. How many types of cheese will you normally be serving? Will you only be serving cheese or will you be offering fruits, breads and other food items? This can have a huge impact on the kind of cheese plate that you select.

You need a plate that is large enough that the types of cheese can be displayed so that they are not in contact with one another. You want to make sure that if you have a strongly flavored blue cheese, it is not coming into contact with a soft, mild flavored cheese. When you are looking for a cheese chopping platter, consider how bit it is and visually plan the layout. If you can fit all the types of cheese on the plate while keeping them separate, it is big enough.

When you are deciding which cheeses to serve, the selection may be overwhelming. Think this way: you can opt to serve a variety of cheeses that are based around a theme, such as a cheese making region, a texture such as all creamy types of cheese, or an ingredient. This may mean you are serving all goat or sheep milk cheese, or selecting types of cheese that have been aged a specific amount of time. This can influence the cheese plate you select. You may want one that has different depressions for keeping the cheeses separate or grouping them together. It can also depend on which cheese implements you will use.
